Nikos Kolionasios was born into a family of farmers in a small village near Lake Ioannina. In rural Greece in the 1930s, families produced most of their food at home. Pies and sweets were common, but baklava was special. When Nikos’ grandmother Maria, a mother of eight, dusted the kitchen table with flour to roll out phyllo, everyone knew a celebration was coming — a wedding or Christmas.
Nikos later moved to Athens with his wife Xanthi in search of a better life. They opened a bakery that quickly became known for its bread and sweets, especially their handmade baklava. As demand grew, Nikos realized they needed greater expertise and production.
They returned to Ioannina and established an atelier where baklava rolls were carefully handmade, individually wrapped, and distributed across Greece.
